The Food
The menu of B. Restaurant reflects the many dimensions that make the Byblos, namely oriental, Middle Eastern and European-influenced cuisines. The menu is divided by themes giving way to creatures of the water, land and air delicately prepared by the in-house resident chef. Upon first bite, the foie gras is perhaps the best in South of France with a rich flavor and seared texture touched with sweet pieces of fruit. The selections of fish are market fresh and reflect the current catches made especially for B. Restaurant at the local market. Wines are paired by the house sommelier and allow the palette to grasp to full flavors of cuisine while guiding guests through the hotels own collection of vintage and rare vineyards.
